Here is one that is great with pheasant, grouse, puddle ducks "woodies, teal" and chicken.

in a sauce pan boil 2 servings of pasta, I prefer angel hair, but any thin and long pasta will work fine.

1/2 lb, split and butterflied, salt and pepper.

Let cool and cube.


3 TB of unsalted butter
1 TB chive/ shallot, scallion, dried onion. (it is an onion flavor not the key flavor)
2 TB Lemon juice, fresh or bottled.
1/2 tsp garlic
1 tsp basil (1 tsp dry, 1/2 tsp fresh)
1 1/2 TB parmesan.

Over low heat melt unsalted butter.

when melted add Shallots onion or chive, etc.

and the garlic too.

just before serving add the basil and parmesan to the mixture.

Toss in cubed chicken, and mix with pasta.

toss and serve with grated cheese and toasted crusty bread.
