This is a fun and quick recipe that can make for a light lunch or a nice quick entree.

4 breast halves from your favorite poultry
1 Chopped Onion
1 Large Stalk of Celery, Chopped
6 TBS butter
salt
pepper
1/2 tsp chili pepper
4 tbs flour
1/4 c white lambrusco or chardonnay (a little drier)
12 croutons
2 cans crabmeat (or about 2 cups fresh)

First thing you're going to do is take your poultry breasts and place them between two sheets of wax paper. Then, proceed with a meat mallet to flatten, starting from the inside and working your way out in a ring until the breast is only 1/4-1/2 inch thick and fairly uniform.



Then, melt 3TBS of butter in a skillet, and saute the onions and celery until soft.



Put the crabmeat in a bowl and add croutons and white wine. Mix thoroughly. Then, add onions and celery in butter to the mix. Stir and let sit for 5 minutes uncovered.









Lightly salt and pepper the flattened poultry breasts and lay on a clean surface. Divide the filling up amongst them and proceed to roll them up.



In another dish, combine flour and chili pepper.



Carefully coat the rolled poultry breasts in this coating and place in a baking dish. Melt remaining butter and drizzle over them. Bake at 375 for 1 hour.





Voila!

I'm having trouble seeing all of the forums, Buzzy. Like, sometimes when I click trapping, it shows me 4 of them, and then other times I click and it shows me all of them. I don't know what I'm doing wrong.

My deceased grandmother had those exact same plates....wierd....she made some of the best spaghetti....

looks VERY goood....Only our crab does not come in cans only POts.......White wine with fish and chicken....some red wine to go with the chocolate....type dessert......yummy

Dang it! The other day I was convinced I was in love when you were cooking those venison cheese steak sandwiches serverd on paper plates!!! Now you done gone and used "canned crab" and a real plate!!! \:\( \:\) SAY IT AINT SO!!! LOL

Gotta admit it looks some kind of good!

Lol possum skinner. I'm not as close to Maryland as you are. In Massachusetts, it's either rock crab, canned crab, or lobster, and while I do use quite a bit of lobster, it gets old very fast. *gag* I can't eat any more lobster or scallops for at least a month. I'm new england seafooded out.

Rock crabs are a pain in the patootie to clean so most people just throw them back. So, with the prices of crab up here right now, it's either canned or pseudo-fresh from the supermarket which right now costs more than lobster so no thank you. \:D

lol! You know, it's funny. My grandmother GAVE me those plates when I got my first place. \:D I love them. They're thin, don't take up hardly any space in the cupboard, and they go with my decor. I told my grandma what you guys said and she laughed. \:\) She says grandpa's favorite dinner is....

spaghetti! Go figure.
