the whole plant is edible.........are you refering to the heads jeremy......the part that eventually turn brown?

the cattails are verrry good eating early in spring.......collect the young shoots and cook in butter.

right now........if you peel away the stalk.....get the white center...it tastes exactly like cucumber..........i may go get a batch tonite...lol.

the roots can be dried and made into flour.

in late spring the green immatureflower spikes picked just before they erupt from the papery sheaths
boil them and eat them like corn on the cob

we have some large garden centers here that buy bundles of them to sell to the rich people with fancy ponds, also dug a large batch for a wetland reconstruction company one time but have never eaten them.

I collect the pollen, sift it through silk screen, and use it for flour substitute. 3/4 regular flour to 1/4 pollen. It tastes like corn meal.

3 possum
15 muskrat
5 beaver
2 otter
1 mink
2 raccoon

Just be carefull as to where you get them...along roadsides or in drainage ditches or chemically controlled ponds have a very high risk factor for contamination.
