small shovel. its pretty easy to dig as it grows close to the surface.if you find it in the right spot, like along a sandy creek bank, all you have to do is pull it out.

just get on your knees with a roundpoint shovel , start at the edge of the patch and start digging thru the middle..........maypples are not far under the ground usually 2-3 inches. you can dig a bunch in a short time,,,,,just stay at it.

Use a nusuery shovel and slide under the roots and peel like a carpet and then roll and lift....Not sure I can explain so you understand but thats how I do it like a Matt or roll of carpet. Take a LOT to make a pound dried...you'll ned some good fans to circulate and dry proper.

May Apple fruits are only good when fully ripe. They are ready when the plants are turning brown and falling over, usually in August. The fruits will be golden-yellow and a little soft. If you touch a fruit lightly it will fall off the plant into your hand. The raw fruits are OK, but better when prepared as a drink or preserves. By the way, the recipe for May Apple preserves on the Mother Earth News website was first published in Stalking the Wild Asparagus, by Euell Gibbons.
