Anyone ever use an EZ Plucker or other tub type plucking machine for wild (shot) geese? Any advice on scalding temp or other?

Never used one, or plucked a goose ever.
Are you sure you want them plucked whole? I don't know anyone that had much luck roasting one.

Let's keep it that way gcs... I once ran with the tough guys that banged birds out of the sky only to toss them in the mud all day, sling them in the bed of the truck under a mountain of gear and then complain about the breast meat they butchered off them because it wasn't beef filet they could just toss on the grill. I'm not so tough anymore- and whole roasted goose- when handled properly is fine fare any meat eater would enjoy.

I never plucked a goose.
My experience with the plucker was, it was fine for farm species birds but anything wild with lots of pin feathers, no good. Those got skinned.

Dip em in your scald, when you can run your thumb up the leg an feathers slip with ease, she ready. If you start tearing skin she too hot or in it too long. You should be able to put your hands in the scald but not more na second. And plunge the birds up and down, helps work in the scald. Eat em up

I usually breast them out and make goose pastrami, did 50 of them last year.
The guys loved them that way.

At least your eating them... smile

I have said this before "when you eat waterfowl you know you are eating WILD. There is no way you are going to make it taste like chicken" Thats OK with me. I agree with beaglador roast goose is mighty fine eating.

X2 tomahawker and teepee2 said That's the way we do a couple of hundred snow geese a year. As I prefear my waterfowl plucked unless we make sausage. Then we skin the majority and pluck a few as to add the skin an fat and not use as much pork fat back.

I hand pluck all my geese and then blow torch off the fine pin feathers. I only used a plucker on meat chickens. That said I don't think it would work nearly as well on a goose. The reason being is that waterfowl waterproof their feathers. The scald water will have a hard time loosening because it cannot get to the feather follicles. I have heard of others who tried geese and had to leave them in the water so long it just torn up the skin when plucked. Again, I have never tried it.
