Thought I fleshed the coon pretty good but when I checked on it I see I missed some fat around the bottom by the tail. What is the best way to get this off now that it has been drying? It's just making the pelt greasy. Could I put borax on it to dry the grease up after I try scraping it off?

Wipe the grease off with a rag as it dries. Unless you want to rehydrate it then trying to flesh those spots now will be messy and difficult. Pictures would help. I don't recommend using anything like borax on it. That is not the proper use for that product, and a rag is far simpler.

I have the same problem.

This is my first time trying to flesh and do t have the best set up.... needless to say...the job wasn't very good.

What's the process for rehydrating and refreshing?

If you have left over fat deposits just get on them with your fleshing knife.
I've done 1000s of poorly fleshed coon when I worked for NAFA.

Or just take a dull bladed knife and drag the blade across the fatty area. If you put enough pressure on that fat spot you can remove the dried scab and milk out the liquid fat.
