Grass fed is synonymous with bad shoe leather as far as flavor is concerned, IMO. Nothing wrong with grass fed beef if the person raising it knows what they are doing, unfortunately 95% plus don't know what they are doing.

I have done both grass fed and grain finished, grass fed beef. The steaks and roasts were better on the corn finished heffer than the grass fed steers. The burger may have been slightly better from the grass fed beef, but was not much different than the grain finished.
The grass fed steers were butchered at around 28 months, to beat the 30 month cut off, where processing gets much more expensive. One was just over 1600 pounds and the other steer just over 1550. The grain finished, grass fed heffer was butchered around 16 months. It was around 1250.
In the future, I plan on grass feeding until the grass starts thinning out and then finishing on grain.

Keith That's a good plan, I like to grow mine to 1000 lbs on a limited grain diet, mostly grass or forage and then pound the grain to them for 80 to a 100 days. Its a little tricky switching over to an all grain diet but I can get about 4 lbs a day gain and a well finished steer.

There is a huge difference in the cattle breeds. The angus are a very good beef cow. Hereford I like too. I have had Charlios and holstien that were grain fed and ate like shoe leather. I am going to breed a couple of angus heifers to a wagu bull and try that. I love the wagu I have Had so far. Grain fed all the way. And ive eaten angus that tasted bad, also finished Holstein that melted like butter . Its all about how and what you feed them. Wont eat grass fed and can tell the difference between corn, wheat, and spud fed beef.

Grass fed are usually lean, like what you would eat in Europe. Corn fed beef has more marbling and is more tender. The guys above that said check with your local butcher are spot on.

I know you said that you don’t want the Wagyu, bet we for sure ain’t massaging em out here in Oklahoma. The ranch I used to work on my junior and senior year raised wagyu and black angus. We also did hybrids between the two. Some of the best tasting beef Iv ever eaten was around the camp fire after the cattle roundups we had twice a year.

Look around and find a local guy with a cow calf operation. You want one that also raises row crops. Many will finish a few head every year. You have to place an order for a fat (ready to butcher) beef several months in advance. Most of the cow calf guys sell calves at 600-700 pounds. You need to give your word to buy one after its fed out. Around 1200 pounds. Lots of times the producer will haul it to a local processor. The small processor can let the carcass age in a cooler for 3 weeks. That aging is what takes beef from grocery store quality (killed and cut up after 12 hours) to wonderful meat tasting like meat ought too.

I kept a t-bone for myself. Honestly one of the better steaks I've had in a long time, and everyone who bought it loved it.
