Got a friend that is thinking about doing this.

New Zealand or California are really good meat rabbits.
Boy are they tasty, wish I still had some!(sometimes)

Most of the meat rabbit raisers seen to prefer New Zealand or California. Another breed I really liked was Checkered Giants.

My grandfather used to raise them in Oregon for restaurants.

But he's gone now. Always had an outlet.

The standad meat cross is New Zealand x Californian, usually NZ buck over Cal doe. The cross of two similar body type but different breeds gives a terminal cross with "hybrid vigor" that grows off faster than either parent breed.
There's a rather recently developed composite breed called Altex (from Alabama and Texas A&Ms) for use as a terminal sire for crossing on NZ or Cal does. The get has a faster weight gain and better feed conversion plus better heat tolerance. Heat tolerance was one of the goals of the program as heat severely impacts both growth and fertility (particularly the bucks) of domestic rabbits.

I have been raising meat rabbits for around 12 years. Getting a good breeding stock is key to them being productive, as you want good mothering ability and numbers per doe being born. I tried crossing the NZ with the Californians for a few years but my straight NZ's produced just as good and was less of a hassle. I credit that to genetics though and I am sure it varies! I would also advise to design your pens as to be trouble free with low maintenance! I built an open shed and installed automatic waterers with a heat cable to keep from freezing in winter! They are easy to care for and cant beat the feed to meat ratio they produce! I raise most all our meat that we consume such as cows, chickens, and pigs! The rabbits are the moist efficient to raise as they take up less space and takes less to maintain!
