Looking for a good sharp fleshing knife for the sole purpose of slicing the gristle and fat from the neck/shoulder area of coons. Would like to keep it in the $50-$60 range. Any opinions on the Wiebe Elite ? Does it hold a edge well after a dozen coon ? How does it compare to the Necker ? I like the straighter blade profile over the more curved ones, seems like it would be better at slicing. -Thanks

Love mine.Still sharp after several dozen coons.I like the profile of the handles better on the Wiebe as far as being easier to maintain a consistent angle while shaving gristle

I have one. A little flexible for my style so I went to Steinmeyer parallel. Otherwise a good knife. I like it better than my Necker too.

This was my 2nd season using mine. Still sharp ! Handles are comfortable ! Would recommend !!!
