We make Chislic out of the breast meat, trim the meat and bread it with golden dip breading, make chunks about the size of the last digit of your thumb. Sear the meat in a hot oil and do not over cook. The thighs and legs I just go hear kitty kitty and they go fast.
Was born in a Big City Will die in the Country OK with that!

I always brine a wild turkey before I cook it, add enough salt to water to float an egg, add enough Brown Sugar until the sweet overtakes some of the salt, soak for 24 hours and rinse before cooking or Smoking, add garlic and pepper at the end.
*I usually use tenderquick salt cure!

Breast I soak in Italian dressing and either grill or bake (I prefer the grill). The legs I give to my wife and she boils them and makes turkey salad out of them. Sometimes I will take the breast meat after they have marinated for a day or so and cut them in chunks and use them for shish kabobs on the grill. Been thinking about making turkey jerky out of them but have not tried it yet. I think I will try it this year.

^ I do the same , Brine mix soak. Then I bread and fry or deepfry. Sometimes will wrap a breast in Bacon and Bake in the Oven. Missouri's spring season opened up this morning, Record low temp. Probably get out Midweek if I get Time. I'm ready to eat some good wild turkey.

Legs-Simmer in water covering all meat for 4 hrs. Yes 4 hrs. It takes that long to soften the meat.
Take out of pan and let cool. Use 2 forks to pull the meat of the bone and pull the meat apart.
Add your favorite BBQ sauce to the meat and heat up.
Make a sandwich.
My wife insists I make these anytime I get a bird.

I also make Turkey BBQ out of mine. I cook the whole bird off the bones, let it cool, pull it apart then put in into a six-quart stock pot.
I brown two large onions, two celery stalks and two cloves of garlic.
I heat up four cups of the broth I boiled the turkey off in and add:
1/2 cup cider vinegar 3/4 cup ketchup 1/4 cup yellow mustard 1/2 cup light brown sugar 3/4 stick of butter 3 tablespoon Worcestershire sauce 1 teaspoon Liquid Smoke 2 tablespoon salt 1 tablespoon black pepper
Throw the onions, celery and garlic into the heated liquid, mix a little and dump over the shredded turkey in the stock pot. Give it a good mix.
I usually make it on a Saturday morning and set the burner to low under the stock pot, just enough to keep it warm.
I set a bunch of Kaiser rolls, some BBQ sauce and horse radish sauce on the counter next to the stove.
We usually have friends and family over on the weekends. There are never any leftovers Monday morning.
Eh...wot?

I wanted to add that I start the legs about two hours before the rest of the bird, takes them that much longer to get tender enough to shred.

The recipes above all sound good, except feeding the cats and throwing it over the hill. The dark meat does present some challenges, the legs can be put in the crockpot with chicken stock or broth and cooked until they come off the bone as said. They make a very good turkey and noodles also, along with the BBQ sandwich previously mentioned. The thighs can be ground and mixed with a little ground pork, for a meat loaf or meat balls. After all, this is not fast food we have here. But one of my favorite ways to cook the breast meat is "Wild Turkey scaloppini with asparagus sauce". Take serving size pieces of white meat, about 3/4in thick pound them down to about 1/2in thick. dredge in flower and spices of your liking, I just use a generous amount of "Old Bay". Fry them in a skillet until they are done, or browned on both sides. While that is going on prepare the sauce. Use one packet of Knorr's béarnaise sauce made according to instructions. Have the steamed asparagus ready, when the sauce in ready add the asparagus, I like plenty of asparagus. Have the oven heated to 350*. Lay the pieces of turkey on a backing sheet cover with the asparagus sauce bake about ten minutes until warn. Then put grated parmesan cheese on top and return to oven on broil until the cheese starts to crust.

I have the best results using breast meat for any poultry recipe and keeping the dark meat separate. The white meat will be as tender and juicy as a grocery store Butterball as long as it is not overcooked by even a minute. Virtually no fat = no room for error! Just be watchful and it should be wonderful roasted, fried, baked, grilled or smoked. Because of the stringy and tougher nature of the dark meat, I like treat it separately. You definitely do not want to risk overcooking the white meat in a whole turkey in an effort to get that dark meat done! I like to chop the dark meat against the grain into short bits and use it in other recipes like pot pies and certain appetizers. It would be good pressure cooked or canned too. Nvwrangler, I know you asked for leg recipes and this is only for breast meat, but I thought you might enjoy it anyway. This recipe reflects the ingredients I use to make appetizer-sized wild turkey kabobs for the Trapperman Feeds. Store-bought turkey or chicken works great for this too. Wild Turkey Kabobs Kabob Ingredients:8 Short appetizer-sized bamboo skewers 24 3/4” cubes of wild turkey breast (4 to 5 ounces) 6 Strips of bacon, cut into quarters to make 24 short strips 16 Whole water chestnuts Glaze Ingredients:
1/4 Cup brown sugar 1/4 Cup butter 3 Tablespoons white vinegar 1 Teaspoon soy sauce Before assembly:
Soak the bamboo skewers in water at least 30 minutes to prevent them from burning on the grill. Cut the bacon strips into quarters and microwave the bacon so it is just a little warmer than room temperature (for easier wrapping). Cut up the turkey breast into 3/4” cubes and season them with salt and pepper. To assemble the kabobs:
Wrap each turkey cube with bacon and slide 3 bacon-wrapped turkey cubes and 2 water chestnuts onto each skewer so a water chestnut is between each turkey cube. Take your time and twist the water chestnuts as you slowly “screw” them onto the skewers to avoid splitting. To make the glaze:
Combine the brown sugar, butter, soy sauce and vinegar in a pan and heat it until it is melted. Set the glaze aside until AFTER the kabobs are grilled. To cook and glaze the kabobs:
Grill the kabobs over direct heat, turning once, until browned on each side. When the bacon is done to your liking, the turkey will be done as well. Remove the kabobs from the grill and baste them with the glaze just before serving. Enjoy!
