Was blessed with 6 fresh run Steelhead.
I brined them up and smoked them .
Told my buddies no more until these are gone.
So its catch and release for now.

Question is how do I store them until eaten ?
I do have vac pack was thinking maybe freezer ?

Best smoked salmon I ever had was canned with Sweet Baby Ray's BBQ sauce. It was given to me so I don't have a recipe but I'm sure you can google it.

you can vacuum pack and freeze the fish then smoke them when you are ready also , this is what my dad does with his

often he smokes fillets but sometimes hole fish

we like to filet the steel heads , put butter and seasoning on the fillets wrapped in foil , they cook nicely on the grill , hard to get to much of that they also vacume pac and freeze well , just thaw season and cook.

you can also chunk steel heads and have fish boil I prefer lakers for this but both are good

As they are already smoked.
I chunked them before brining.
I will try the vac-pac and freeze method.
Luv smoked fish but after the first 6-8 lbs .
I prob need to back off some.
Cold beer and bonfire was the plan.
Probably over 20 lbs easy.

East of Kazoo.
