After all the discussion on good eggs and how much they are worth with and without commercial feed; I wondered how do you all sell them; washed or unwashed? graded or not? What laws and permits are required by state and Feds?

For home consumption ours are as laid and kept at room temperature will last 5-6 weeks normally, refrigerated will keep 30-40 days. But I am told that to sell at farmers market I need a permit from the state and must wash, candle, grade and refrigerate.

For the washers, what method? hot cold lukewarm water? soap? bleach? other antibacterial?

There is an actual egg wash. The stuff I used came in a bucket it was a dry power mix with some water. Worked well. I actually found an egg washer from a neighbor. If you are doing a few dozen a bucket and a rag should do the trick. Just get them clean of any mud etc.. Check with your state to find out what you need that sounds about the same as here in MN. I backed away from it because to sell eggs the State here wanted to be able to do a 24/7 inspection and since I was going to use an attached garage for storage they wouldn't give me a permit since it was attached to my house. They wouldn't do it if they could access my residence. good Luck

Here we wash them in cool soapy water the day we get them (every day)
I just eye ball em when they are put in cartons. Wife and I keep the biggest ones, mother-in-law gets the game hen eggs and 2 of my daughters get the rest. All the bantam eggs are saved till we get about 30 then they are turned into mustard eggs or spicy pickled eggs.

Believe me, the Store bought eggs are older than a month old when they hit the stores... And they were washed as they were first collected. We've always washed ours with a soft nail brush under cold water -put them in paper cartons and refrigerated them.

I don’t sell mine, therefore I do not wash mine. They come from the coop to the countertop if not real dirty or put into cartons and put in the fridge. I’ll clean them off before I crack them and use them.

Well unfortunately for you, you live in Missouri which means is you want to sell eggs at a farmers market you will have to be inspected by your local Health inspector. There is a big set of guidelines that you have to follow including refrigeration while at the Farmers Market. Some Farmers Markets will also want to inspect your operation as well just depends on your market. There guidelines don't apply when selling directly person to person from home.

I checked in to it once and found to many guidelines and hoops to jump through. It's easier to just put a sign in your yard and get the word out. If you decide to sell person to person don't forget Banks and Courthouse employees. I have a good friend that delivers to them every Friday. When he has to many extras he takes them to the local livestock market small animal sell and they auction them off.

my 2 cents

BBarnes, if you deliver to a person at bank parking lot, for example does the same "sell at home" rule apply?
The way I read that page, selling at an auction (established market place) would require the same permit and inspections that selling at farmers market would. The $5 permit doesn't amount to much, it is the candling, grading, labeling and any time inspections that look bothersome.

we don't wash ours as it speeds the aging. if selling just wipe off most of the "stuff". we don't refrigerate ours either.

There is a part of the label on each container that tells what day the eggs were gathered/graded as part of the Feds rules on commercial eggs. Month/day/year or three digit day of year. April 20-2018 or 110-18
