Case mini trapper is all I ever carry. Hunting trapping or fishing
Here at the house I have filet knives for fileting, pelting knives for pelting, boning knives for boning, butcher knives for butchering, and even a beef skinner.
Mini trapper has two different blade shapes, holds an edge and is more than adequate for field dressing deer or anything smaller. Will work for pelting and lots of knife stuff. If hunting something bigger than deer I put a small hatchet on my belt.

I forge a rat tail on them and drill the antler, then set them with epoxy. I have thus far only used caribou antler as they are more solid then some other species.

I gotta say im a big fan of the style that sniperbbb posted a pic of. I have an old schrade that is very similar. As a second i have an old schrade golden spike and it is my go to skinning knife, but it may be for sentimental reasons as much as it works well. I do prefer a more pointy tip, in case you gotta cut an old does throat.

If hunting something bigger than deer I put a small hatchet on my belt. Took the words outa my mouth, more or less. The mini-trapper or the improved muskrat for any and all needs. In the sheath knife category, it would be a mild drop point no more than 4-4.5", really any thing more than 4" blade length starts to stress the hands. Something similar to Scuba's 2nd picture, like the classic Mora. Your blade is going to somewhat limited by the spring you use, it won't get any thicker as you work on it and the blade length will depend some on that, unless it's fish knife.
