We always used a butcher knife but the too type I tried a couple yrs ago it do good!

we have a thing called a corn zipper it is a stainless tool that has a curve to it and a raised cutting blade that strips the rows very clean. the problem is it is slow so it mostly just gets used for raw sweet corn going into a salad. it only strips about 3-4 rows at a time but it lifts the kernels off the cob very nicely.

if putting up corn a butcher or chefs knife is what I turned to you end up cutting a bunch of the kernels in half but you get it all when you turn the cob and make another slice , it makes for a creamier corn having the bits but it tastes good.

I use a VERY sharp paring knife. Allows you to clean a par-boiled cob in 3-4 swipes with very little waste.

I use a sharp kitchen type knife with about a 6-8 inch blade. Works really great. I boil for about 15 minutes, cool, cut, pack in pint bags and freeze.

I used the method Dillrod posted the video link to. You can shear a crapload of ears in a hurry with that method.

X2 It didn't clean the cob quite as well as I can with a knife but if you have a lot to do, its certainly easier and faster.
