I will never understand why people want to eat all these crazy things on an animal. For instance on a cow, its tongue, sweet breads, eyeballs, tripe, kidneys, heart, brains, etc. There are so many other good things like steaks, roasts, etc. Why does anybody need to eat that other stuff? And most of that stuff isn't healthy. I had a neighbor who used to scramble pig brains or fish roe in his morning scrambled eggs. I can't imagine fish-flavored eggs!
The difference between animals and humans is that animals would never let the dumbest ones lead the pack.

Yepper. Tradition, taste, healthy (as in *very* good for us), ethic of respecting game by using every bit we can, etc. Many great reasons for eating organs. "Eat offal, it's not awful!" should be our slogan.

I will never understand why people want to eat all these crazy things on an animal. For instance on a cow, its tongue, heart, I eat beef tongue occasionally. It's not my favorite meat but it is nice for something different. It's good enough to have sometimes. I would rather have deer tongue than beef tongue but it's a lot of work to get the little bit of meat you get, with a deer tongue. When my son was little, deer heart was his favorite part of the deer. On opening day of deer season the first thing we ate, for supper that night, was deer heart.

The heart and tongue are just muscle, like any other meat. As for the other stuff, they're delicious too. My 5 year old daughter absolutely loves em. Every single critter I kill, she begs to have the "guts". She can identify the liver, heart, and kidneys on sight, still in the critter.

Liver has a lot of cholesterol but heart is very low in cholesterol. That could be. The heart I had was tough and bitter, not as bitter as liver, but still bitter. BTW, I've eaten turtle,coon, muskrat, beaver, caribou, moose, elk, venison, mountain lion, even timber wolf. Just none of their innards. Even had fish head soup once. Prefer the fish fillets over the soup. Use the fish heads for coon and mink trapping, they work great.
