I decided to head out on Thursday and see if I could get my first little gourmet deer for this year. That went perfectly. This little nubbin' buck played perfectly into my culinary plans. grin

It was 55 degrees and sunny out, and the wind was right for my favorite old blind. He walked out broadside and gave me the perfect shot. He went about 30 yards and went down right next to the 4 wheeler trail to the house. When does that happen!? I shot him at 5:25 and had clean, skinned quarters, loins and tenderloins, etc. bagged and in a fridge up at the house by 6:40. Zim was on his way home from work when I shot the little guy, so he came down with the 4 wheeler to pick me up just as I was finishing up.

This morning I decided to trim up the meat and get rid of the bones. I'll vacuum seal everything tomorrow.

Outside loins, top round, bottom round, sirloin tips, one bowl of premium loin and rump chunks for fondue and one bowl of lesser scraps for grinding. (The inside tenderloins are conspicuously absent. They were delicious. laugh )

Remaining scrap was minced for treats for the girls. I took some out to give them and almost got my hands pecked off! Give those girls some camo and you've got a serious set of buck hunters!

There's one in the freezer for this year. That couldn't have gone better!

Great job! Very clean butchering! Ready for the pan.

The inner tenderloins never make it into the house here either. We have a summer kitchen in part of our garage. After gutting a deer, I hang up the deer in the garage and wash out the body cavity. I remove the tenderloins and cook one at a time by putting a little olive oil in a frying pan and adding some sliced green pepper, onion, and mushrooms. While they are cooking, I slice the tenderloin very thin and add a good spice called “Grub Rub”. I let the meat stand until the veggies are almost how I like then. Then, I add the tenderloin and cook for a few minutes until the red is gone. I take a hoagie bun and cut in half then hollow out the middle - too much bread. Add plenty of meat and veggies and have a sandwich that is fit for the King or Queen of the forest!

I believe that is the true carnivore method. Hunt, kill, butcher, cook, eat. I am proud to say that I am a true carnivore who enjoys the meat from the hunt.

brined and fresh out of the smoker. going to wait for cold weather to kill one for steaks and roasts. did both shoulders the same way. those have been eaten. were delicious. backstraps were butterflied. tenderloins got cooked. kids and grandkids came over for that. rest was ground. have a little ground meat left and those hams. ham is for xmas. brined and smoked even the fat tastes good. only way I like deer fat.

butchering a hog next weekend and splitting it with my son.

2018 season has been good. Seeing a lot of deer, no record breakers by any means, but I'm sure the big ones are lurking. Task on filling the freezer is off to a good start, and Bella is excited as well because she goes on a venison diet with other goodies. Looks good!
