I've heard that for the U.S. ethnic group that tend to eat the most raccoon, Super Bowl is one of the big times to cook some up. Full disclosure, I parboil and grill (with ample bbq sauce) a couple sets of coon back legs each year. I have no problem with coon meat, I think its taste a combo between lamb and pork, just avoid eating any of the fat by itself. But I've never gutted a coon and cleaned it per such. Besides just potentially daily fare, what other occasions is a lot of coon eaten in those population that eat that meat...?

Because I tend to be a procrastinator, I don't know how well I would do with such a market, even if I had any volume. I do manage to know when the NAFA truck stops happen so if that product has to be in the hands of the Super Bowl consumers by the first weekend of Feb, then the upstream people need it by x date and it works back up the calendar that way. Another way to more fully use a resource even if most of the outside society would hold their noses up at it for various reasons...

When I was a kid I had a colored buddy. He lived on the colored street in town, he was a good friend. His old man would pay me for coons and carp. Heck, I don't even know if it was legal back then in the 70's. But they would shut down the whole street a couple three times a year in the spring, to fall. They all gathered at my buddies place and had a bunch of grill's, 7, 8 maybe 10 and the better of them were homemade from old 55 gal drums. They would grill the coons and fish and ribs and chickens, the air was caught up in a wonderful fragrance. Hundreds would gather and the beer and whiskey flowed, koolaid for the youngins. It was a tight nit affair which I was only invited twice. I'm not sure OP, if in these parts there was a set day, but a few days, when the weather allowed a shin dig. They sure knew how to cook food, and love.
I wonder if tap dancers walk into a room, look at the floor, and think, I'd tap that. I wonder about things.....

I am getting that a fella could dress every coon, and freeze whole dressed, in a big walk in freezer, and then look for a market. I'd be all over that oriental market if we had coon here in those type numbers.

Due to a busy workload and flooding I was unable to meet my coon meat obligations for the Super Bowl. There's still Mother's Day, Father's Day and such. Thanksgiving and Christmas coons are popular. Heck any function could have a coon on the menu.

They really sell best in the fall before Thanksgiving and until the Super Bowl. There's guys from the south that claim they can get big money for every coon carcass they can get but they won't come get them and pay even $3 a piece. From what I have seen carcass buyers for the most part are unreliable as well, don't show when they say if at all, backing out and leaving you stuck with freezers full of carcasses. A new 21 cubic foot freezer should only cost you about $2 a month for hydro.

21 cu ft freezer here is about $700, and I’m not getting more than $6-8 a coon.

It sounds like you would really have to have your ducks in a row to make any money at it. You need a guy in the south in every town with a locker plant that's willing to deal.

I was In the coon meat market for about 10 years. I normally shipped 1,200 to 1,500 carcasses per year. I paid $2.00 per carcass I also skinned coon for the carcasses. And lots of guys just gave them to me so they could get rid of the carcasses.
It cost me 500 to ship + 500 In expenses. I sold them for a $5.00 nose count. It's real tough to find and process that many coon. And It's more then just gutting and putting them In bag. You need to produce a top of the line carcass or your going to be out of business real fast. You can't be buying coon that have been laying around for days before they are skinned. so you can't be buying coon from any fur buyer. Like ADC said It's really expensive running freezers. NAFA stored all my carcasses for nothing. I turned over all my contacts to my friend Robert. Small timer's might make a buck or 2 but It's go big or go home.

We have a large Hmong population around here and some of them work the farm. And I thought I could get a coon market started with them. No way were they going to do coon or beaver. But they would settle for venison so that didn't turn out well.
My buyer would sell those 12 lb coon for $20.00 a head. And It went down to about $10.00 then the smaller coon at $5.00. There was no way that I was going to sit around In the IGA parking lot selling coon When I had traps to run.
I still don't understand why anyone would pay that kind of money to eat a coon. Yuck. When I first started In this racket I would haul a trailer with 2 freezers on It + my buddy did the same. We were going south anyway to trap so It was the right thing to do. But then It got bigger my buyer wanted more coon and he wanted them sooner so then I started shipping.
But like some one said It's about the older black generation the younger generation are fast food junkies.
