Prime grade is produced from young, well-fed beef cattle. ...

Select grade is very uniform in quality and normally leaner than the higher grades. ...
Standard and Commercial grades are frequently sold as ungraded or as "store brand" meat.
You must start with good building blocks!

And TDHP, your sirloin tips are just fine. We have a newbie who has been on the site for days, and he feels the need to hand out a lot of advice - in huge print!

Patrice, we got our beef (whole steer) back in the fall. My friend that we get them from, fed out ours for an extra 5 weeks, due to the processors busy schedule. It turned out to be our best beef yet. Very thorough marbling, and absolutely delicious. Please don't let Zim's steak get cold during the photo shoot. He may get grouchy. Lol Just ribbing ya Zim!!
