I don't know what the wife does but we make venison meat balls' Pre cook them then freeze them individually then place them In a container. When you want a few meat balls just take out what ever you need and heat them up.

My wife liquifies sautéed onion, carrot, celery and tomatoes and a little garlic and pan fries her meatballs in that sauce.

My favorite is porcupine meatballs, using Campbell's tomato soup and minute rice. 1-1/2 # lean ground beef 1 egg 1 can tomato soup (I like to use two so I can use the sauce on my mashed taters) 2/3 cup minute rice 1/4 cup chopped onion 1/2 tsp garlic powder 1 tsp salt 1/2 tsp pepper 1 Tbsp Worcestershire Sauce 1/2 cup water
Mix egg with 1/4 cup of tomato soup, add remaining ingredients and mix well, reserving the soup. Form mixture into meatballs and place in a baking dish. In a separate bowl, mix remaining can of soup with 1/2 cup of water (1 cup if using two cans of soup) and another shot of Worcestershire sauce, a dash of soy sauce and salt and pepper to taste. Pour soup mixture over meatballs, cover and bake at 325 for an hour. Serve with mashed potatoes and peas or other veggie of choice.

Ingredients:
1 Tbsp. olive oil 1 pound 85% lean ground beef 1/2 cup ricotta cheese 1 large egg 1/4 cup bread crumbs 2 Tbsp. chopped fresh parsley 1 Tbsp. Minced garlic 1/2 Tbsp. chopped fresh oregano or 1/2 tsp. dried 1 tsp. salt Pinch of crushed red pepper flakes 1/4 tsp. ground fennel
Directions:
Preheat the oven to 450°F. Drizzle the olive oil into a 9×13-inch baking dish and use your hand to evenly coat the entire surface. Set aside. Combine the ground beef, ricotta, eggs, bread crumbs, parsley, garlic, oregano, salt, red pepper flakes, and fennel in a large mixing bowl and mix by hand until thoroughly incorporated. Roll the mixture into round, golf ball-size meatballs (about 1 1/2 inches), making sure to pack the meat firmly. Place the balls in the prepared baking dish, being careful to line them up snugly and in even rows vertically and horizontally to form a grid. The meatballs should be touching one another. Roast for 17 minutes.

This is our recipe pcr2.
4lbs of burger 1 cup of chopped onion 1/2 cup of parmesan cheese 2 large slightly beaten eggs 1 cup of Italian bread crumbs 1 table spoon of salt 1 tablespoon of pepper 3 tablespoons of minced garlic 1 cup of milk 1 tablespoon of oregano 2 tablespoons of parsley Mix everything together and make into balls. Place on cookie sheets greased with olive oil and place in preheated 350 degree oven. Bake for 25-30 minutes. This should yield approx 48 meatballs. This is a recipe that me and my best ever cooking buddy, my late Mama came to love after much trial and error. Hope that if you try it, you'll like it!

Eggs with bread crumbs or saltines will form the glue that holds it together. This, and Dad always chopped up an onion with the saltines and eggs in their. When he made meatloaf, it was 1/2 pork sausage with any red meat burger, with the eggs and saltines and onions chopped.
