Pan seared it ....minute a side....in a cast iron pan ....then finished it off in the 350 degree oven.....Wicked Good

Same way I make my venison. Except I have to overcook it for the wife. Mine is done way before hers is.

About 20 minutes.....we put a heat probe in it and set it for 125.... when the buzzah went off..remove from oven...let rest for 5 minutes. Hey...you can always cook it more..if too rare..Just get the cast iron pan hot for the short sear.

To belabor a point on wild game, especially deer, sheep and pork, this quote explains it all:




Here’s an important notice to venison lovers. If you insist on serving your venison with a pink center, make absolutely certain that the meat has been frozen prior to cooking. Otherwise, cook meat at a temperature of at least 145 degrees and allow a rest time of three minutes before carving and consuming. During the rest time, the temperature remains constant or continues to rise briefly, which destroys the toxoplasmosis pathogens.

The only meat that is basically safe is beef, and that is beef, not dairy burgers. in raw, rare or dried state. Just be safe as this infection has antibodies in the blood for life.

You know, for the past 30 years or so, I never did eat breakfast. Just one big meal, after work. About a year ago I started eating breakfast, pretty much the same every day. 2 eggs over easy, usually, ham/pork/sausage/bacon or beef. Some kind of taters, fried or shredded with cheese. Orange juice and a wheat roll, sometimes 2.

Looking at your scrambled eggs, they look fine. I'm not sure why, but years ago I took to liking hot sauce on my eggs. Not a bunch of hot sauce, 6 or 8, maybe 10 drops. I'm not sure why, but it does make a difference.

I'm heading to the reserve to attend a moose hide traditional tanning workshop put on by the women.(its on all week).
