So when your talking One pass 2 passes and a third pass are you saying your going over each section 3 times?
Looks good but No way can I do that. I'll stick with rough skinning and flashing on the beam. I use to have a video of my skinning and fleshing a beaver but I loaned It to some one and they were going to make copies but they seemed to have lost It Well that's the story I've been told. I skinned that beaver In 3 min and 16 seconds flat. Can't do that any more.

One pass is one run of knife strokes from tail to head-or head to tail depending on which side I'm working on.
Forget that fear of gravity-get a little savagery in your life.

A lot of clean skinning is knowing how to sharpen knives. The right sharp knife with the edge just right will allow you to shove off large amounts with every sweep of the knife. Like Boco is saying holding the knife at the right angle and shoving as if you are scraping excess butter off your toast is what I do as well.
Unlike Boco, I use a trough to skin in which works the best for me. I skin about 4 per hour which includes knife sharpening, castor and oil sac removal and taking off the heads. We've got big beaver out here so about 80% are 60" plus. Tacking out the pelt and final clean up is about 10-12 minutes extra for me.
My fear of moving stairs is escalating!

I'm still going to use my Necker and flesh on the beam. I can push off every bit of fat along the edges with the dull edge and never worry that I might cut the hide. When done with edges I end up with a 4" strip right down the center of the back.
