Curious if some of you ever freeze animals like muskrats/mink/weasels, for example, during the busy trapping season and then skin/flesh/stretch in ~spring when the weather is nicer and you may have more time?

I don't.
If you have the freeze capacity & are busy, go for it.

I always skun first, then freeze pelt. Your title scared me, I don't make it a practice to delay fur handling.
I don't have the room to freeze whole animals.
My Spring time is a mix for tuning traps, boiling/waxing traps, Turkey hunting, Fishing, yard work & sitting around the campfire.

Once in awhile I'm ask to do a skun'n/fur handling demo or seminar so I have a relative that will freeze whole Fox, Coyote or Coon for me.

I do that often for the small species like you posted. If they are frozen when harvested, I leave them frozen hanging in a shed or put in the freezer.I don't leave them frozen until spring though, just for a week or two until I can set aside a couple days for skinning and stretching.Larger animals like fox cats beaver otter, etc get skinned, then sometimes I will freeze the skins.I never freeze the large animals on the carcass unless they are already frozen when harvested, then sometimes I will let them hang for a while in the shed in freezing weather until I can set aside a couple days for skinning and boarding. No more than a couple weeks.

Forget that fear of gravity-get a little savagery in your life.
