Anybody here have a CanCooker? I ordered a CanCooker Jr the other day and it will be here tomorrow. Planning a nice stew to break it in.

Any favorite recipes or tips/tricks? I did read you should wipe a little dish soap on the bottom to make the soot easier to clean. And I got the rack that fits inside for steaming things.

yes I have one and use it a lot. Make sure you spray the inside with a cooking spray. love the fact everything is in the can and easy clean up.
Have not used in on any thing but elec. stove so I have not used dish soap on it..
On our stew pot we use a camp over a wood fire we use dish soap.

We use ours several times a summer. Works great. My only complaint is the meat doesn't brown in there. Brats and roasts look kinda anemic. We have put the brats on grill after they come out of the cooker to give them a little color. It takes fine, just the appearance. It's a great way to feed a bunch of people.

LDW, I noticed that, too, in the videos I watched. The meat doesn't look awesome straight out of the CanCooker. Saw some guys that made ribs with them and they definitely needed to be finished on the grill. But they sure looked tender.

Their jambalaya recipe is really good. I think it comes in the booklet with the cooker, but let me know if not and I’ll send it your way. Tweak the recipe to fit your needs. We make it every couple of weeks. Only tried a few other recipes, but everything we’ve made has been great.

We use ours quite a bit while camping. Potatoes, carrots, and onions with sausage and chicken is always a hit. You should also try some mountain dew sweetcorn. Stand the ears up on the rack and dump in a half stick of butter and a can of mountain dew. Good stuff.

How does it differ from a pressure cooker, other than lower pressure?

No Problem, here is their recipe:
1 lb fresh shrimp, deveined
•2 Andouille sausage links, cut into ½” slices
•3 boneless skinless chicken breasts, cut into 1” pieces
•1 large onion, diced
•2 celery stalks, diced
•2 cloves minced garlic
•1 large red bell pepper, cut into small pieces
•2 tbsp CanCooker Original Creole Seasoning
•2 tsp flour
•24 oz chicken stock
•14 oz can diced fire-roasted tomatoes
•1 cup medium grain brown rice

DIRECTIONS:

Spray non-stick cooking spray inside the CanCooker. Pour in the chicken stock and stir in the flour and Creole Seasoning. Add the remaining ingredients, except the shrimp, with the chicken and sausage on top.

Latch lid and heat on medium / low. Cook for 55 minutes. After 55 minutes open lid carefully. Add the shrimp and cook for 5 more minutes. Remove from heat and let stand for a couple minutes. Remove lid carefully and serve.

Note: You can increase or decrease the amount of ingredients in this recipe but please make sure to use at least 12 oz. of liquid.

A few changes I like to make are to use chicken thighs instead of breast, use whatever seasoning I have around, and I omit the brown rice and cook a pot of white rice on the side.

I don’t think we’ve had anything bad from ours. Almost a can’t fail. Put a small carrot on top and when it’s done the rest is done. Hard to over season your food using one.

Do you typically just dump the seasoning on top of the meat like the instructions say? A couple of videos I saw that's how people were doing it and I thought it was a little odd. I get that the steam circulates inside the cooker, just seems like it would be better to more thoroughly mix the seasoning with the contents. Looking forward to trying it out tonight

I season as i go but the majority goes on top and the beer gets poured in last taking it down through everything. That and as the steam condenses and dips back down during cooking does the same

we loves ours! been usin it alot for years.
as said spray inside with cookin oil for easier clean up.
for liquid we use beer a fair amount... but have recently switched to mountain dew and its great.
weve made everything from turkey breast, seafood, roasts, veggies. and we have used it on the stove and over a fire.
my favorite recipe has to be... kielbasi sliced into pieces, baby potatoes, baby carrots, cabbage, creole seasoning, and a can of mtn dew.

I was also wondering this,

or how is it different than a dutch oven with a heavy lid?

America only has one issue, we have a Responsibility crisis and everything else stems from it.

The CanCooker cooks with steam and convection. There's a hole in the lid to allow steam to vent out, so there is really no pressure that builds inside the unit.
