when i water at night i try to avoid water on the leaves. Just on the ground.

Sandy soils need a lot of irrigation, but on the plus side sand is extremely efficient in the applied water getting to the plant roots systems as little is bound up in the molecules like heavy clay soils or loams, but that means knowing how much to water and when.
I would browse the internet sites regarding irrigation on vegetable crops, such as central sands of WI. Yes it is commercial but they raise, corn, soybeans, green beans, potatoes, carrots, onions, cucumbers etc. and what works for them the best on thousands of acres probably would work for the small garden plots of fruits and vegetables as well.

So I have been watering after dinner and my onions are starting to show again. Should I bring some soil back around them? I'm trying to grow large onions.

My third year gardening.

I can't grow good onions so take this for what it's worth. But you pull dirt away from onions as they grow. I have a friend that grows huge onions and he pulls a little away at a time. When their ready the bulbs are just sitting on the ground with just the roots in contact. I do know from my own experience onions do not tolerate weeds at all.

onions are extremely shallow rooted so yes keeping the moisture levels up and all weeds or other vegetation out is critical as nutrients are utilized from a small area. Most of the garden veggies I grow such as beans, brassicas, peas, beets, etc. etc. are also shallow rooted and keeping moisture levels up and competition down is a good thing. That is one reason why mulches work very well as they hold moisture and reduce weed pressure.

Thanks for the help, I have grass clippings between the rows this year, for weeds and moisture. The onions are looking great for the late start this year.
