I grind mine once through a fine plate.

I grind twice typically through 1/8th inch plate. Once is ok but twice gives you a faster break down and allows for a more creamy end result. All depends upon your end result texture as to choice of plates and how many times you grind.

I use a 3mm plate, which I think is 1/8, like Bob uses. After the glands rot down for at least 5 years, they're like puddy, and very nice to work with. It may take less time than that, but I like them to be good and stable before I use them. I'm currently using glands from 2008.

I also grind when semi frozen. Much less binding and hang up on the blade and it keeps the grinder cooler if you are grinding several gallons.
