I coat crappie fillets/pieces with this. Louisiana Fish Fry

Then soak them in 375* peanut oil until they float.

But before you do that, chop fresh cabbage, cilantro and onion. Crumble some Cojito cheese. Make some sauce(aioli?) with mexican sour cream (la crema), spices and lime juice and get out a jar of home made salsa. Here's the recipe for that. Salsa with lime juice.

Warm your tortillas in a little butter in a skillet and have at it.

I know what you mean but my mexican cooking style was mostly influenced by an aunt who grew up in San Antonio so maybe I could pass the test.

Oh crap I forgot to mention you need Tapatio hot sauce too. Talk about bad manners. Life is better with Tapatio especially if you're eating tacos or pizza or eggs or whatever.
