Did they just teleport into the open fields?
Get yourself some snares. If your forest bottom is anything like ours, wiring off a snare to a tree will be a lot easier than finding solid ground to stake in.

They have to enter the trees somewhere. Find where the paths cross and enjoy. Coyotes seem to be more relaxed in my opinion in cover than an open cut field. I think you'll be surprised what reaction you get. They are probably coming from the timber to the open thru the timber on noticeable trails. Thus find and set up pinch points within the timber on these trails also.
The only constant in trapping is change so keep learning.

I hope you’re planing on snaring them rather than using footholds. Unless there’s a quad trail or tractor trail going through the bush I think footholds will be almost useless. I’d set a baitpile somewhere in the bush then wait for the animals to make trails to the bait then hang snares on the trails. Hopefully that’s all legal there.

I have been running bait piles and hanging snares for some time know I have come to the conclusion that a bait pile set up In the wide open space gets more attention then a bit pile set up In cover. Coyotes just seem to be more comfortable feeding out In open then they do In heavy cover. A little story to this effect. I picked up a road killed deer one day and I drove up a small hill through lots of cover leaving great tracks through the cover and the snow planning on hanging some cable In both truck tracks.. There were plenty of coyote tracks crossing by the base of the hill so I was on location. A month later the coyotes dragged that deer down the hill and consumed that deer In about 3 days. But they never touched It or even went up the hill until that one day. Why didn't they eat that deer in the cover? Why did they drag It down the hill to the open to eat It? I just think they felt more at ease In the open.
Let the critters show you where they come out of the cover to dine and then hang your snares In that cover.

Footholds are great along woods rds or trails and make perfect places to PRE-HOOK my drags on the saplings.
You'd be wise to arrange jumping sticks, maybe a lil below waist high so deer will jump over sets, yet allow a yote to stroll under.
Any log end is perfect for rub set, even if you have to prop it up to knee high.
Then there are the many ops for a post set, too.
Predators often travel the higher areas so they can look down/hunting from above.
If you'd a picked up Christmas trees last winter, scouting at summers end to find trails, then lay those trees to narrow the trails a bit, can often help too. As matter of fact, those pinch points are good for blind sets, too.

Coyotes/wolves want to see, both approaching and while they're on the bait, if there’s danger from other predators, thus the best sites are in the open and ringed by heavy cover to hang snares in. All you basically need, for the ideal station, is an opening large enough for “large birds of prey” to land directly into.

I don't think the problem Is catching a calf or a cow as It Is having the cattle destroy your sets buy stomping on them.
