I prefer to wrap a portion size in cheese cloth when I do a boil. Depending on size of fish, I use about 1/2 to 1/3 of a fillet, 2 or 3 potatoes, and some with onions and some without. Makes it easy for some of my picky eaters who do not want onion, and I can keep a pot boiling and just add a plate as people come.

I’m with you white17, it seems ironically cruel to put the fish back into water and then boil it. Not to mention, many other ways to cook a fish and have a tastier outcome.

It’s certainly a WI thing but I highly doubt Scandinavian. I’ve never heard of a fish boil in MN or when I was in Norway. Sure, Wikipedia credits Scandinavians and they make it seem like something that was done all around the Great Lakes in logging camps. Again, never heard of it anywhere except Door County.

I presumed it was something from the British Isles, maybe Welsh? Those Brits are known for their great food...

we use to do fish boils all the time as a kids , they had them all over the u p ,lots of salmon, pike, an white fish

The is more to Scandinavian than just Norway!

it is very possible a Scandinavian created great lakes tradition. they had a need so the make a solution.

Vinarterta is another such creation , it is Icelandic but none of the ingredients are Icelandic , however they were easy to import dried prunes so a celebration cake was made using what was easy to import.


America only has one issue, we have a Responsibility crisis and everything else stems from it.

I think boiling fish is a bit more of a unique Wisconsin thing I used to help my grandparents with their church fish boil , a great job for a kid tending fires and boiling fish.

boil in salted water about a cup of canning salt per 5 gallons water

traditional would be over a wood fire but I just use a high pressure LP burner

I use a 30 quart stainless steel pot on my outdoor lp burner the only seasoning in our traditional WI fish boil is salt.

typically served 1-2 pieces of fish depending on size , 2 potatoes and 2 onions , rye bread , coleslaw and cherry pie for desert.

although I have a extra liking for onions , when I helped Grandpa boiling the ladies in the serving line alwasy had extra onions and I would get an ice cream pail of the cooled onions , borrow a salt shaker and eat them like apples between boils.

this was a big fish, lake trout , fish prep is very minimal , gut and cut into sections.

when My great uncle ran fish tug we could get fresh white fish he still has connections and big family boils are white fish but home boils I mostly do trout caught from my dads boat on lake Michigan this was one fish

Might be good but I am to lazy to eat fish that way. Dont like nesting with bones, fried fillets for me.

Poaching fish is a traditional Irish method,(among other methods),Native people often poach fish like sturgeon(which is excellent)as well as smoking.
For best flavour and texture when poaching fish it's essential not to overcook.

I love a good northern boil, I don't like them as much with whitefish but there still good,
The key to a good fish boil is the amount of salt and fresh dill in the water. Mmm I'm gunna make one

Several times, the first was when relatives from Fish Creek Wi. did them up. I think that is Door County.
Did not know it was that regional.

I used to go salmon and lake trout fishing every year in South Haven, Mi. and that's where I was introduced to fish boils. Lot of the people there had boils and when there was a Steelheaders tournament they would have a boil. I've done it and it's good, they called it poor mans lobster but around here fish frys and crawfish boils are king.

fish creek is definitely Door county.

I guess it is more regional than I thought.
