There are many recipes available using a GOOGLE search. Most of the recipes are quite wordy but will finally get to the recipe. A couple of links are below.

Delicious Caramelized Onion Jam with Balsamic Vinegar- https://www.attainable-sustainable.net/caramelized-onion-jam-recipe/

Onion Jam- https://www.allrecipes.com/recipe/220546/onion-jam/

Grandpa did some once using a bread and butter pickle recipe, he just used all onions instead of adding cucumbers.

Bigfoot- No, it doesn't look like anything I would care for. I do like onions as a flavoring to meat dishes.

I like the idea of having small jars of caramelized
onions to poor on pork steaks. We cleaned out the onion row in our garden and got three gallons of sweet onions

My wife cans just about everything but onions and we have quite a few. An onion truck crashed on the Cascades this Winter and we ended up with 150lbs of jumbos. I have been giving them to friends and leaving some in unlocked vehicles at the Co op. She was loading my food with them and I pick the over burden out. Onions can be fed to cattle but to many will kill them, seen it happen at Payette, ID. I put a 50 lb. sack of sweet onions in a garage once, the mice got into them and it wiped them out I found twenty to thirty dead. I like onion but I always take that extra slice off.

You can pickle them in sweet mix and let everything else out or you can take the bubs of winter onions in the fall and pickle them also. The next time i pickle some red horse I will add onions to it. I just try it the first time to see how it will be. I got more red horse in the freezer
