You can bake them or put in a crock pot. There is also a market for there skins also. put up like a coyote on a wood board for a coon with the tail slit open but leave the tail bone in.

Your missing out! I love groundhogs. You can cut them in to fryer pieces, roll them in flour, S&P and brown them in oil in the skillet. Then bake them @350 for 40 or so minutes depending on the size. You can also pressure cook them till almost done, and then fry them. Sometimes I leave them whole and put in the slow cooker like a roast, taters, carrots, onions and such. One of my favs is to either pressure cook them or slow cook them and shred the meat off the bone and add your favorite BBQ sauce. Pulled GH sandwiches. People often scoff at me for eating groundhogs but GH's are a tasty critter.
I wonder if tap dancers walk into a room, look at the floor, and think, I'd tap that. I wonder about things.....

Used to know a guy that canned them. They were good. He would give us canned bear and groundhog. You would only know which by the small rib bones of the groundhog.
