a local swiss is Stettler swiss , it's a bit milder but makes a good sandwich

Add on a thick slice of Braunswieger, good eats.

We have a cheese making area here also in Michigan.

Its Pinconning, Michigan on the east side of the state. Just north of Bay City, Michigan.

A number of Polish/German influence.

You want unique and good cheese, go there.

Try the Maple leaf cheese store in Juda. Gordy does mail order and has pretty decent prices.

Thanks for the kind words Zim. If you order curds from Maple leaf, I would recommend that you order on Friday or Saturday. He gets his fresh ones in on Thursday so a Friday or Saturday order is less likely to be last week's caryover.

You Limburger lovers need to try it on cocktail rye with a dab of strawberry preserves.

If your curds get a little "old" and lose their squeak, about 5-8 seconds in the microwave brings back the squeak!

I have 3 bricks of Limburger in the ice box right now. That sounds good and I am certainly going to try it.
I've got a bunch of Strawberry jam I made this spring. I've also got a bunch of Black Raspberry jam I made and I am going to try it with that.

Also, some of the more expensive Blue cheese is mighty good.

You need to get that limburger outa the fridge. It belongs on top of the fridge in a coffee can with a lid. then it is always ready to spread on toast.

They below link shows that in WI we make over 600 varieties and we are the only state that requires that commercial cheese made here be made by a master cheese maker and we also have the only master cheese maker program in the US. There are probably a few winners in the 600 and some you would like.
