The previous post on pickled eggs got me hungry for some, so I made up a batch. These were done with beet juice, vinegar, sugar and onions. Can't wait for the week to pass to try them.

Looks good. My wife does a egg in a mustard pickle that is awesome too.

That post had same effect on me. Canned a bunch of beets earlier this season just for them.
Many folks raising chickens these days, and gifting eggs. I'll have a good gift for them.

I hear that! Goldnuts' wife gave my wife 11 dozen this past spring. We pickled them and gave back half.

Do any of you pickle coturnix quail eggs instead of chicken eggs? I sell many thousands of coturnix quail, to people who use them to produce eggs, every year.

I have quail eggs coming in regular too, and was going to try to make up a batch someday. A lot of peeling on those little guys though.

We all must be wired the same! lol. I thought the same thing when I saw that post, and said that to the missus, but she told me that the neighbor that bakes cakes was coming over and cleaning us out. Might have to wait till next year! frown. Hens are starting to wind down.

I put a bunch of pickled eggs on top of a belly full of beer one night at a bar in my younger days. Pretty much had to get a new girl and friends due to the off gases from the mix. Last time I had a pickled egg. Lol

If you peel the eggs while their still hot and add them to your hot brine there is only a 2 day wait.
The purple is to the yoke on day 2.
Just how I was taught long ago.

i made a batch of eggs in a mustard brine and a batch of deer polish sausage in the same and they were both really good thats the only way i will eat a beet is pickled my dad used tuo make me eat them as a kid made me gag come to find out he didnt like them either lol

easiest eggs I ever peeled were pressure cooked , fast and the shells come of very well on almost all of the eggs some eggs are just very attached to their shell but pressure cooking made them the easiest I have ever peeled

use the basket and set it up out of the water low pressure 6 minutes from getting pressure then turn off heat wait 6 more and release move strait to cold water with the eggs too cool them you can start peeling in the cold water as soon as they start to cold for a few minutes, the eggs steam cook an not water cook

These are my favorite as they are bite size but it takes a bunch to fill a half gallon jar

When I dabbled with quail I used to pickle most of the eggs.
It was kind of neat to have something to bring to a potluck or dinner that no one else had.
They also make a nice garnish for fufu drinks.
I have a buddy who would also trade me for a few pints of pickled quail eggs for maple syrup even up.

Never had any, but loOK good. Let me ask, I have a quart jar of homemade pickle beets in the cupboard, if I eat them and save the liquid, can I just throw some boiled eggs in the jar for a week..?

Here's my first attempt at a batch.

I loosely followed coyotesoldier229's recipe from the other pickled eggs thread, and followed the cooking process in the video he linked and the eggs peeled pretty easily. The brine is 3 cups vinegar, 1 cup water, 1/3 cup sugar heated to mix, then I added 1 tbsp each of salt, pickling spices, minced garlic and red pepper flakes. I also added about 2/3 of a white onion and 2 or 3 sliced jalapenos.

17 eggs, about 3/4 of the brine and the peppers and onion fit perfectly in a half gallon jar.

I imagine they'll get better with time, but how soon can I try one? About a week?
