What cuts of meat do you have? We use buffalo like beef.
Id walk thru hades for a grain fed buffalo ribeye.

What cuts of meat do you have? We use buffalo like beef.
Id walk thru hades for a grain fed buffalo ribeye. We have grain fed! All cuts you can think of at my fingertips.

I would start with a boneless ribeye roll, and cut your own steaks how thick you like them. I like half inch here. Use the end cuts for stew meat. Buffalo cubes makes some mighty fine adovado! I use dry Colorado grown chilis of course. Nothing like a pepper grown in the San Luis Valley. I think (know) the altitude makes em sweeter. Any meat from a buffalo is best served medium rare it can become very chewy is cooked beyond that. The only time I throw caution to the wind is on buffalo shortribs cooked low and slow in a crock pot with carrots and potatoes with a couple stocks of celery just because serve with horseradish and ice cold tea what a fine meal !
