i have several old hickory knives that need new handles
I have several types
of wood on hand apple, maple, ash, and oak all are dry and seasoned
what type would you choose of them
also for nice finish what oil is your recomendation

From what you have listed, apple and maple have the nicest figure. You can bring that figure out with a good dose of aquafortis( basically nitric acid) and a light touch from a burnsomatic torch. Birchwood casey makes a product called "Tru oil" which works great. Basically a high speed linseed oil finish. You can leave it gloss or rub it down with a rag and some rotten stone for a oil finish.

If by Hickory Knives you mean kitchen cutlery, Salad or Cooking oil makes a nice finish and is food compatible.
