I peel it and put in a food processor. don't breathe the fumes. don't get fumes in your eyes.

Interesting. My family recipe adds vinegar ,salt, lemon juice, and a little sugar. Good idea peeling under water. Grandma said the sooner you add the vinegar, the less the heat.
Got a ham thawing. Going to dig some root tonight.

I like to puree it at meal time with a little heavy cream to make a nice paste. Most folks say its to hot. Vinegar does kill the heat. Put vinegar in the food processer if you want very little kick. its best freshly pureed. that good spicy flavor will not last. You can freeze unpeeled roots and they will keep for months. you can dig them in any month with an r in it. replant the top of the root when you dig them.

I've found it best processed outside. Too much like tear gas in the kitchen otherwise !!! Dennis

I grind it up in the house I brush the roots good and then grind up and let site a few mins. then add vinegar and sugar. Works for me, I do not worry about the fumes. Like stated once it is grow when harvest cut the tops off leave some of the base on it then replant the tops. They will grow back after,

You guys who grind inside are a lot tougher than my wife or I are. I tried grinding inside the house...….my eyes were a flood.....had snot hanging out of my nose.....never knew you would drool like that!
From now on, it's outside on a windy day!
