I do like eating beaver but it's a pain getting all the fat off the meat. My question... for those of y'all that enjoy the finer meats is it necessary to remove all the fat like with deer or is the fat good eating more like beef?

I just wack the hind quarters,,front legs and backstraps off em.Not much fat at all.Just don't get the castors or oil glands on the meat.

Yeah castor juice is bad for sure!!! I am just super careful to take ALL fat off wild meat I hate tallow mouth but guess I will leave some on and try it. Thanks for the reply

I like beaver in a stew … so I debone the leg meat and take the backstrap and a little of the neck meat. I cut as much fat off as possible, then cube it and par-boil it. Most of the fat that was left on the meat turns to liquid and floats to the top. Slowly pour this off of the meat, rinse it off and brown it is a skillet. Add your flour mixture into the skillet, creating your gravy. Put all in crock pot with your selection of vegetables and cook it for several hours and you are ready to eat.

Actor that sounds great!!! Gonna make a batch this year for deer camp. Ross that sounds like good clean living there. T.D. and loosegoose that's what I had figured. Cleaned a small one up this week from a damage job not much fat yet but the wife was happy to have a bit of fresh meat in the house gonna pan fry it this weekend.

beaver fat is great for otter singed put some on the otter fur stands up nice no more singe.

Garry- For a way to remove the fat that is on the surface of the water, Since the fat will float , you can put ice cubes in it to have the fat jell up or slice of bread to suck up the fat. You can do that with any other thing that will have fat float. Or put it in the fridge to jell up.
