Bought some belly strips while in Saint Mary's. The lady we purchased them from gave us some kippered king samples.
Best salmon I've ever had.

Does anyone have a favorite recipe?

I'm just curious if what you refer to as "kippered" is hot-smoked?

I'm sure it's a hot smoke although it is not the least bit dry. I think the pre-smoke prep is what made it especially tasty. It was not strips nor was it canned.

I'll try and contact the Eagles Nest Lodge owner who got us in contact with her. Great place to stay.
