I cut it into chunks, salt pepper then roll it in some flour, brown it with some butter in a pressure cooker. Then add some bayleaf, a dozen or so juniper berries a glass of red wine and some shrooms. Mixed dried ones work fine. Cook it till it almost falls apart. thicken the liquid to a gravy and serve with potato dumplings and red cabbage That sounds good

Clean it and slice, then lightly brown in butter with some creole seasoning or chili powder mixed in the butter.
Emphasis on lightly brown, I never cook more than medium.

Here is the only way I eat It now. Boil in water for about 3 hours with half a onion and salt. Let cool slightly slice fry in butter a with fresh onion and put the onion in that was boiled. After raw onion is tender add a half tablespoon corn starch to a 3 table spoons of the water the Heart was Boiled in and add it to the heart and onions. Turns into a delicious Gooey buttery dish
I do gizzards the same way!

Soak in milk , slice thin , flour , lawerys season salt , peper . Flash fry in buter or grapeseed oil

I like to cube it about1/2" then mix it into some stuffing mix kinda sloppy and bake it for a couple of hours. heat a can or jar of gravy to put on top. Dennid
