2 Cups of mashed sweet potatoes
1/2 cup of sugar
1/2 cup of shortening
“Pinch” of salt
2 1/4 cups of self rising flour

Add sugar and shortening to hot mashed sweet potatoes. Let cool. Mix in flour and salt. Roll out and cut out biscuits. Can be frozen until ready use.

Bake 450* for 15 minutes.

A couple more tips. The smaller potatoes work better, less stringy. I cooked 9 small sweet potatoes, which was a little more than 2 cups, in the microwave for 10 minutes. Wrap them in plastic wrap.

I rolled mine out a little thin and got 16. If you roll them at 1/4” you will probably only get a dozen.
