I love aged brick. Used to really like Widmers but the last two batches something was off. What’s your favorite brand?

I eat a lot of cheese but I'm no connoisseur. Swiss, pepper jack and muenster are good, don't care for sharp cheddar all that much. Had some cheese curds at camp last summer that were really good.
Eh...wot?

Try taking it out of the original packaging and wrapping it in saran wrap the day before you eat it. Sometimes that will allow off flavors to dissipate. Decatur Dairy, Buholzer Brothers (Klondike), and Country Castle (Chalet Co-op) all make pretty good brick. Being such a high fat and high moisture cheese, finding a brick that ages well can be pretty hit or miss.

I like William's extra sharp Pinconning cheese. They are out of Pinconning, Mi. I also used to buy this extra EXTRA sharp cheddar from a little cheese place south of Lakeview, Mi., called the Farm Country Cheese House. It was aged for 4-5 years. My word it was good. Some of that stuff you sorta let melt away in your mouth instead of chewing it all up. There is a place in Ontario, I cant remember where, called Black Diamond, their extra sharp cheddar was excellent also.

I buy x sharp cheddar on sale, put a date on it roll it over in passing pantry. Leave untouched yr. or 3 always has good bite. Does take time like country store cheese. Tut
