River rat xxx cheddar ....aged 10 years .... You go to Pulaski for it?River rat is some good cheese.And not to change the subject,,but how about some Crogan Bologna to go with that River Rat cheese.YUMMY

That big brick that people lined up for in the 1970"s that there gubment cheese... Man that was some good stuff !!!!!!!!!!!!!!!!!!!!!!!!! Couldn't beat it for grilled cheese sandwiches

I think the question was specifically about Brick cheese........ With relatives in WI, we visit a few times a year......best and most reliable source I've found comes from these guys..... https://ehlenbachscheese.com/products.php?cat=Bricks+and+HavartiHave no clue who makes it. They just have big slabs of it and they carve off as little or as much as you want. I have a pound of Medium in the fridge now. Have often wondered if aged Limburger......the stuff way out of date......couldn't be used as bait for something. Used to be a guy in Iowa who made a killer catfish bait out of it. I am a cheese fanatic. I like all cheese including many of the ones posted on here But if you haven’t had a good aged brick that stinks the fridge up without being open You haven’t lived lol. Now back to the aged brick, anyone have a favorite? I have had Verns that was very good too but lacks consistency.

Crogan bologna is good but I prefer venison sticks from tri town packing ...
