Morning guys. Was wondering where the glands or curnlers are on coons. My half sister used to cook them but she never said where these where located to be cut out. Thanks for any infro and all have a great day.

There's one in the back of each "knee" joint, some on the back, and in the front armpits. Sometimes you can't find them, I think they come off while skinning sometimes. Coon isn't bad, just kinda strong to eat by itself for my tastes. It's good in something like chili or stew though.

Grew up eating smoked coon and noodles. Haven't had the need to eat any in the last 50 years which is fine with me.

There is round worms in all organic meat and most meat that has had wormer . Ive found those same type worms in squirrel , rabits ,and dirt raised pork . I find it odd how people will get squeamish over eating a coon but will eat a chicken or a pig .

Very edible.
Carcass preparation is critical to the table value.
Body fat and glandular removal at harvest are very important.
Body fat ( as much as possible) is an absolute must.
Therefore skinning for fur and skinning for table fare are two different styles.
Neither one is easy to master till you have done a few.

We ate a lot of them in the '80's and we ain't dead yet. She boiled them til the meat fell off the bone then put in the skillet and added barbecue sauce and herbs. Its a little stringy to me but very good. We ate our fill just like we did deer. We ate deer probably 20 yrs then just quit. Ain't eat deer in 5 yrs.

How is a racoon comparable to a chicken?

Well I mean you can throw about anything in a chicken pen and they will eat it without much thought. If given the option a coon will at least be picky

I've not had worms in my chicken's meat in my experience.

I've never done a whole carcass, just the back legs off of some. Paraboil to get a lot of the outside fat off (off taste) and then bbq on grill with sauce. To me, its a cross between lamb and pork. I avoid eating the fat on the inside of the legs as well. I take the back legs off of 1 & 2xl sized coon. My experience doesn't include stringy meat, maybe that comes from big OLD boars...
