Three times the omega 3's of beef. Google nutrition charts for beaver meat.

My fear of moving stairs is escalating!

Some of the best eating from the wild, and I don't check the insides. It is better than that old downer cow that is ground to make burger. Free range meat.

I still don't know about the liver being the arbitor of the health of the meat. I have two older friends that told me when I saw a large white spot on the liver... the meat is fine just throw away the liver.

But then I posted that same thing on Trapperman and enough people told me to toss the entire beaver that I did. I don't know. I just do not know but I am Sure there is a doctor out there who could shed some light on this.

On how to cook it..........If you're not trying Meat Trapper Tim's "Steamboat Beaver," you're missing out.

Also, if no spots, I eat the liver, the heart, And the lungs. Put the lungs in soup, it's freaking great (a little chewy).
