A lot of hunting dogs like curs and fiests and working dogs like English shepherds and border collies are pretty variable in appearance. They are bred for the ability to do a task, not looks. In many ways, breed registries like the AKC have hurt the function of dog breeds by mostly focusing on appearance rather than ability.

That's all hair, she's got a good 3" on shoulders back, she weighs about 40 lbs
Even got fur between toes, she's actually pretty skinny, eats every other day most the time

When breeding for performance, typically and ideally only dogs that can successfully complete the function they are bred for are bred. Breeding is both an art and a science. Form follows function to a fair extent.

If you breed for form only, function almost always suffers.

I think the main purpose of most breed registries for dogs is first to make money for the people who own and work for the registry. Second to allow the dog breeders to charge more for the dogs they sell. Many breed registries have no purpose past those two purposes.

Ideally the registries main purpose would be to continue to improve the breed, by only allowing dogs that met the physical standard and that were proven to be able to perform the purpose they were created for to breed.

But if you know what is in the breeding when your breeding for certain traits you can match up similar traits alot easier.

At first maybe but through hard culling and breeding best to best then line breeding on that you fix the traits you want. Most of these lines are the product of a lifetimes work. Also why so many lines don't survive the death of the original breeder.

But without doing skills tests on all dogs being bred, you do not know if they carry or have lost that critical trait. Unfortunately most breeders of hunting and working dogs, take a male and female of a breed they have access to and breed them together, just for profit, with no concern on whether they are actually good enough at their job to be bred.

To make it even harder, most very good dog won't throw as good as they are and some not so good dogs produce better than they are.

Good breeders have to have a keen eye, excellent memory, creative mind, tons of determination and some luck.
