Maple syrup is like 90% sugar. Not sure how you could make blueberry jam with it and have it be zero sugar.

Or do you mean zero extra sugar?

Wrong answer for a diabetic;
The sugar in maple syrup is all the diabetic can break down. not like cane sugar which is 2/3 the wrong structure which they can not break down.
One is alpha and the other is beta in the structure of the glucose molecule.
So when you make Blue berry jam with maple syrup...with moderation of taking you should be OK.

If you look in old cook books prior to 1890 all the sugar was maple sugar and the recipies called for 80% of what they call for today.

I use maple syrup in a lot of cooking. For jams, mine are currents and tart cherries and maple syrup. I also use maple syrup or dark brown sugar wherever sugar is suggested. Waffles, meatloaf, etc. I like the later season syrup with more maple flavor. We sell the light amber as that is what many want.

Real maple syrup or granulated maple sugar is primarily sucrose with some glucose and fructose. Don't know is this helps you or not. I'm hypoglycemic so I'm the opposite of you. I don't need to be concerned with sugar types as my blood and body wont store it and I need it. Maple sugar is easily made from maple syrup and can be used 1:1 as a replacement for other sweeteners
