I always worry if the steaks will be as good as the first time. Sadly, these were frozen so it really forces the concern. Fresh is a relatiive known quality. Will these equal the flavor and character of November. Only one way to know. Thaw and then into the frying pan !!!

Maybe it's me but I've never noticed a difference with frozen. As long as it's. It freezer burned and you didnt out it in the freezer with your fox uring, you're good to go.

Use a good vacuum sealer when you put your venison up and you won’t notice a difference, even a year or two later.

Thaw, wipe dry, put them in a baggie of flour and salt and pepper. Then brown in hot oil about 3 or 4 minutes a side. Then place them in a baking pan with some water and bake on 350 for 35 minutes. You'll love it, other then having to wash another pan lol.


I wonder if tap dancers walk into a room, look at the floor, and think, I'd tap that. I wonder about things.....

Chislic is always good in my book with deer meat it’s my favorite way to cook it.

Just cooking oil, at feeds here we deep fry it at home pan sear it on the outside to hold what little moisture. Cut the pieces about the size of your last thumb digit! Out here we buy the Golden Dip mix in a 4lb bag not them little boxes.

I like to freeze my venison in bigger portions then cut steaks or cubes after it thaws while it's firm right out of the fridge. I think it keeps better but that's probably because I just freezer bag most of mine and it never makes it past a year. Never much of a difference in taste. I always cook it pretty rare. The kids don't like it unless it has juice (blood) in it.

Do you cook it hot & fast or low & slow? I use the low & slow approach, but recently read something saying cooking it hot & fast is better for wild game. Either way, I guess just best be sure ya don't dry it out.

Venison is the only meat that you can put into a crock pot and have it come out dryer then when it went in. LOL Making chislic servers several functions it sears the outside, keep in the little moisture it has and tames the wild taste all at the same time. Only way I will eat venison everything get cut into chislic.

We eat a lot of deer. 5-14 a year depends on the year. Higher years I did a little hunting low years it all the kids. Kids shot 5 last season I shot 2. We eat it about any way you can imagine and very little goes to wast. The head, hide, guts and hoofs are about all that get tossed. Bones, trim, tendons silver skin. Get saved for the dogs. Heart liver if not keep for us gets slice 1/8" and dehydrate for dog training aids and treats.

We well the wife normally grills steaks sprinkled with garlic salt. She cooks with wood on the grill not charcoal. They turn out great and we prefer it over beef.

Once or twice a year she will fry steak but it's not as good. As far as gamey tastes in deer I only find that in rutting bucks and if in a doe it was handled poorly. Example not gutted and cooled down asap. Maybe instead drove around in the back of the truck for half a day.
