Finished a loaf late last nite. Let it cool over night till morning breakfast. Wife and I ate a generous slice each. She likes the heel best on fresh bread as do I . Of course she got the heel.

This is supposed to be around a 2 # loaf. I think it is around 3-1/2#. You eat a good slice of this and you got yourself a good meal almost by itself. Smear a heavy layer of butter and a good smear of your favorite jam on it and it can't be beat.

Got some fresh beaver tail oil working by the stove for some dipping sauce for later.

Heading to the store tomorrow to buy some more flour and yeast. Wife and I are talking about trying some hard rolls.

I do. You should keep one end sealed to help keep the loaf from drying out more quickly. At least that has been my experience.

Went to the store and found plenty of flour but the Yeast shelves were totally bare! Anybody know how long yeast stays viable/usable after its expiration date? We have a few packets we found up in the cupboard.

Put it in a little warm water with a little sugar and see if forms bubbles. If it does it'll work in your bread. If not its junk. That's how most yeast bread recipes start anyway.

The dry yeast I used a few days ago and today was dated May 2017. Bread is just fine and raised nicely.

I kept my foil packets in the fridge however. Here is a loaf I just dropped out of the pan. Too hot to touch yet.

OK with time on my hands and a request for bread pudding, got to work on the main ingredient......the bread. In this case, sourdough made from flour, water and starter only, so requires no yeast. (does take about 18 hours time......but that is just it sitting around doing it's stuff)

Bob-We have some that supposedly expired in 2019 that we will try. We also have some from 2015/16 but I bet I can find a whole new supply soon.

Hey Moosy......you get in a bind.....send me a PM and I’ll hook you up. When I grabbed a hand full last week...i had no idea how much yeast you had to put into bread.My recipe only took 1/4 teaspoon...lol...

After reading this thread and showing it to the wife, we decided we would try our hand at making bread. After a couple hours in town there is not a pack or jar of yeast in this whole town for sale. Wiped clean. Had to call my mom and get her to loan me a tablespoon from her cache....which she had in her purse while she was in town at my sisters. The wife finally found some online...had to order 3lbs of it, only stuff available. One place went out of stock WHILE she was looking at them. So now we can try to make bread tonight. WIfe said she is gonna take her order of yeast and put it in sandwich baggies and sell it on the corner.

I have a few 4 oz. jars in our formulation facility I had forgotten about. I will have to go and check the dates on them I use them in a pinch when I have to jump start and speed up a fermenting processes.

Thanks for the offer Nessie but I think we'll be okay. I checked our "old" stock and we have 6 from August of 2019. Will grab a handful next time I build up my courage to go to the store. I wore a mask today. Amazing the space people give you when you wear a mask.

boil a quart of water with a cup sugar and put it in a jar with a lid, when it cools to under 115 degrees put some of the old yeast you have in the jar replace the lid with plastic wrap , it should activate some of that yeast and since there is nothing to compete with it it should be bulging that plastic wrap in an hour or two at room temp.

you are making a culture of activated yeast as it feeds it multiplies now all you need is to keep adding sugar water and when it foams place fridge with the lid on to slow the growth.

this is a way to super-charge yeast and keep going on the same small sample you need to use about half of it each day and feed it again
