Scouting beaver sign in the hills of Western NY today and noticed that the ramps we're poking out of the ground and inch or two. It didn't take me long to come back with a shovel. My wife makes the best potatoe ham and ramp soup. How about your neck of the woods and favorite way to eat them?

Substitute them anywhere you would use onion or garlic. The tops are great in salads, chopped up and added to baked potatoes, soups... Our ramps are about 4" tall (harvestable but the bulbs are still small).

Still to early here, this is how mine I have planted in back yard look right now.. Not to much peeking out..They usually show them selves week or two earlier than ones I dug them from in woods.. Couple little wild onions next to them and they always pop first. Mac

Made some dip on Tuesday. The hot dip I made tastes a lot like a buffalo chicken dip, without the chicken.

Made some dip myself after seeing the last post. Soft cream cheese, port wine spread and as much ramps as you like
