What kind of nasty looking beans is that?lol Here in Texas, we cook up a pot of PINTO beans and a pot of rice and combine them on the plate. There is usually a jalapeno involved somewhere.

Just need a little Jiffy mix corn bread to round it out.

Yesterday I hung my dutch oven over a fire outside. Put chicken broth, pork, chicken, andouille sausage, rice, wild rice, onion, cauliflower, broccoli, salt,pepper, garlic, cumin, rosemary, and cayenne, added some file and a roux after about 5 hours. Had it again tonight. going to finish it off at lunchtime tomorrow. We like it.

Got two grandkids here getting stir crazy. let them help prepare it. been teaching my 8 year old grandson stuff. like how to change oil, change a battery, we fixed a 4 wheeler starter. Took apart the carb and cleaned it for the riding mower. Dug out a 9.5 1964 evinrude I hadnt started in at least 15 years. Pulled the rope it wasnt froze up. All the fuel lines were cracked. So we replaced them and the plugs. I ordered a water pump and new condensers and points. Still got some cleaning to do. I am hoping the fuel pump is still good. Anyway thats our new project.

If you spread that over a bed of tortilla chips with some onions,black olive and a layer of your shredded cheese of choice, baked it for awhile and have some salsa and sour cream on hand, you would have some decent nachos.

Y'all can keep those southern recipes...The BEST rice and beans I ever had was from a Puerto Rican woman here, rice, pigeon peas, and chicken fat....OMG

Used to be a little cuban place in Miami I liked to get beans and rice in. Some of that cuban food will put a smile on your face too

My wife makes pork chops with black beans and salsa. I've never been a big pork eater, but that changed my mind. You haven't lived until you've tried it.

We just built homemade pizza, even homemade crust, since I was making a couple loaves of bread anyway.
