Ness it's just dough with mozzarella, provolone and hot pepper cheese with pepperoni stuffed in mini bread loaves, I make up a batch and freeze em. I usually take em out hunting or fishing for a snack.

That gluten free dough is tough to work with.

Like I said in the earlier post I made its just basic white bread like mom used to make, but it makes awesome toast! Great for dipping an over easy egg, or a peanut butter sandwich. smile

I may try something a little fancier next round. wink

Those are good looking loaves there ADC. i have found they dont last too long around here with just the wife and i. Seems I am making bread every 4-5 days now. Once you taste the flavor of our homemade bread and the weight of it you loose interest in store bread.

Ness, it was great. Tough, crisp crust, toothy interior.
The next loaf is proofing to be baked this evening.
I have plans to divide the recipe and make bread bowls for ham and potato soup on Tuesday.

The last two batches I made was the sweet bread, it is very good. Still have one loaf left for this week. Then back to mixing again.

I find if you can’t finish eating the bread with in a day or 2......It’s best to freeze. Day 3 it’s not as good for sure. Maybe freeze slices...or 1/2 loafs.

Bob...what do you keep your bread wrapped in ?

Once sliced I cover the cut end with saran wrap to keep the moisture in the loaf and to prevent dry out. Then I put it in a 1.5 gal. large zip lock bag, press out excess air, fold it over tight then zip it shut. This is my routine for all fresh cut bread. It seems to hold well this way until it is all gone. No mold.

I use to refrigerate it but don't like the feel of the bread doing that method. I freeze extra loaves the same way. Wrap bread in saran wrap tightly and bag it then freeze.

That is good looking bread for sure. The sweet bread flavor is even better.

Interesting observation I have found. I always find when baking two loaves when done I have one loaf a bit larger each time then the other. I divide them evenly as is reasonable. I see yours appear to be the same one larger then the other.

Ness, yep. 3 cups flour, 2 tsp salt, 1 tsp yeast, 1 1/2 cup water. Let rise 8 to 18 hours, I've been going 9 or 10, then bake in a heated dutch oven. I am using a cast iron dutch oven. There's a fair amount of smoke at 450. Wife is looking at enamel dutch ovens.
